Really special meal that is easy to prepare. Make sure to use Spanish chorizo.
Mussels and Chorizo
1 Tbsp. olive oil
½ red bell pepper, finely chopped
½ onion, finely chopped
2 garlic cloves, finely chopped
1 thyme sprig
1 14 oz. can diced tomatoes, drained
¼ lb. chorizo, chopped
1 lbs. mussels
½ cup white wine
Warm the olive oil over medium heat in a large pot. Add bell pepper, onion, garlic, thyme, salt and pepper. Cook until vegetables are soft, about 5 minutes. Turn the mussels into the pot, pour in the wine, increase the heat to high and stir the mussels. Cover and cook for 3 minutes. Check mussels and continue to cook until all are opened. Once all mussels are opened, serve mussels immediately.
