Chopped Greek-Style Salad with Red, Yellow, and Orange Bell Pepper

I served this salad for lunch with some grilled chicken kabobs!

Chopped Greek-Style Salad with Red, Yellow, and Orange Bell Pepper

Ingredients:

3 Tbsp. olive oil

1 Tbsp. red wine vinegar

1 garlic clove, minced

1 tsp. dried oregano

1 cup grape tomatoes, cut in half lengthwise

2 persian cucmbers, diced

½ red bell pepper, diced

½ yellow bell pepper, diced

½ orange bell pepper, diced

½ cup Kalamata olives, cut in half

¼ cup red onion, chopped

½ cup crumbled feta cheese

Directions:

Mix together olive oil, vinegar, garlic, oregano, salt and pepper. Mix together tomatoes, cucumbers, bell peppers, olives, red onion, feta cheese, and vinaigrette.
