Marinated Chicken Breast + Lemon Steamed Spinach

I have been killing it with the easy weeknight dinners, here is another one to enjoy!

Marinated Chicken Breast

Serve 2

Ingredients:

2 boneless, skinless chicken breast pounded thin

1 Tbsp. apple cider vinegar

1 tsp. thyme

1 tsp. oregano

1 tsp. sage

1 Tbsp. mustard

1 garlic clove, minced

2 Tbsp. olive oil

1 Tbsp. soy sauce

1 tsp. hot sauce

Directions:

Place all ingredients, salt and pepper in a plastic bag and mix well. Place in refrigerator for at least 30 minutes. Heat grill pan (or grill) over medium heat. Grill each side for 4 minutes or until cooked through.

 

Lemon-Steamed Spinach

Serves 2

Ingredients:

10 oz. bag of baby spinach

1 Tbsp. olive oil

Zest of 1 lemon

 

Directions:

Have a steamer ready to go. Add spinach, oil, zest, salt and pepper. Mix well then cover to cook for about 3 minutes or until spinach has wilted.
