Another easy weeknight dinner, the classic chicken parmesan served with a caesar salad.
1 chicken breast, halved
½ cup flour
1 cup breadcrumbs
¼ cup grated parmesan cheese, plus extra
1 Tbsp. chopped basil
1 Tbsp. olive oil
1 cup tomato sauce
Pound chicken breast till both pieces are of equal thickness. Mix flour with salt and pepper. Mix together breadcrumbs, cheese, and basil. Place chicken breast in flour, then egg, then breadcrumbs. Heat oil in a large skillet over medium heat. Place chicken in skillet until golden brown about 4-5 minutes each side. Preheat oven to 450 degrees. Place chicken on baking sheet, cover with tomato sauce and extra parmesan cheese. Bake until cheese has melted on top about 10 minutes.
