Artichoke Stuffing Bites


These bites were really tasty! I definitely recommend them as a great springtime snack.


Artichoke Stuffing Bites

Serves 4


1 large artichoke

2 tsp. olive oil

1 shallot, minced

2 garlic cloves, minced

½ cup breadcrumbs

¼ grated parmesan, plus extra

1 egg

1 Tbsp. chopped basil

1 Tbsp. chopped parsley

¼ grated asiago cheese

½ lemon, juiced, plus extra


Bring large pot of water to boil. Place the artichoke in the boiling water and cook for an hour. Drain upside down and allow to cool. Saute shallot and garlic in olive oil, until soft. Let cool. Remove leaves from artichoke, reserving the largest ones with the most heart still attached. Clean heart of artichokes and mince. Mix together with garlic, shallots, breadcrumbs, egg, herbs, cheeses, lemon juice, salt and pepper. Arrange the leaves on a baking sheet and drop a teaspoon of stuffing on to each. Spray with a fine mist of oil. Broil for 10-12 minutes or until nicely browned. Sprinkle with more cheese and lemon juice.
