Seriously one of the best meals I have made. They were spicy, creamy and sweet. Eat these mussels along side some fries and a cold glass of white wine.
1 Tbsp. butter
1 small onion, finely chopped
1 shallot, finely chopped, rinsed and dried
1 tsp. curry powder
2 small chile peppers
1/2 cup white wine
1 thyme sprig
1 parsley sprig
1 bay leaf
2 lbs. mussels, scrubbed and debearded
1/3 cup heavy cream
In a large pot, melt butter over low heat. Add onion and shallot and stir a bit. Add curry powder, chile peppers, salt and pepper. Cook for about 3 minutes. Pour in wine and increase heat to medium. Add thyme, parsley, and bay leaf. Simmer for 3 more minutes. Add the mussels to the pot, and if possible stir them around a bit. Cover the pot and increase the heat to high. Cook for 3-4 minutes till all mussels have opened. Transfer mussels to a bowl, leaving sauce in the pot. Reheat the sauce over medium heat and add cream. Heat for 3 minutes then pour on top of mussels.
