Nice light meal great for an easy lunch.
Grilled Asparagus Salad with Orange Vinaigrette
½ lb. asparagus
2 tsp. grated orange rind
2 Tbsp. orange juice
¼ cup olive oil
2 Tbsp. balsamic vinegar
½ tsp. Dijon mustard
2 bacon slices, cooked, crumbled
½ lb. salad greens
Snap off tough ends of asparagus and discard. Combine orange rind, juice, olive oil, vinegar, salt and pepper. Mix well. Pour 1/3 of dressing of asparagus, marinate in fridge for one hour. Hear grill to medium high heat. Grill asparagus for 8-10 minutes covered. Place asparagus on salad greens, sprinkle with bacon and rest of dressing.
