Potato and Beef Croquettes


Really fun and easy meal. Serve the croquettes with tonkatsu sauce, shredded cabbage, and some garlic noodles.

Potato and Beef Croquette

Serves 4


1 large russet potato, cut into 1-inch cubes

1 tsp. vegetable oil

1 small onion, diced

½ lb. ground beef

½ tsp. sugar

1 Tbsp. mirin

1 tsp. rice wine vinegar

2 Tbsp. soy sauce

1 cup flour

1 egg

1 Tbsp. water

1 cup panko

Vegetable oil for deep frying

Shredded cabbage

Tonkatsu sauce



Add potatoes to a pot and cover with water. Bring to a boil and cook potatoes until soft, about 15-20 minutes. Heat oil in a frying pan over medium heat. Add onions and cook until soft about 3 minutes. Add beef and cook till completely brown, about 5 minutes. Add sugar, mirin, vinegar, and soy sauce and stir. Mix together beef with potatoes. Allow to cool. Whisk together egg and water. Place flour and breadcrumbs into separate bowls. Make a small ball from the beef and potato mixture. First cover it in flour, then egg, then breadcrumbs and place on a plate. Repeat until you have used up all the beef and potato mixture. Place croquettes in the freezer for a few minutes so they become relatively firm. Heat oil to 375 degrees. Fry a few croquettes at a time and place them paper towels to drain excess oil. Serve hot croquettes with cabbage and tonkatsu sauce.
