Moule Mariniere

Mussels are one of my favorite meals. They are best enjoyed with fries, homemade aioli, and a fresh baguette.

Moules Mariniere

Serves 2

1 Tbsp. butter

1 small onion, chopped

1 shallot, chopped

2 garlic cloves, thinly sliced

½ cup white wine

1 thyme sprig

1 parsley sprig

1 bay leaf

1 strip lemon zest

2 lbs. mussels, scrubbed and debearded

In a large pot heat butter over low heat. Toss in onions, shallots and garlic. Season with salt and pepper and cook for about 3 minutes until the onions are soft. Pour in wine and increase the heat to medium, add the herbs and lemon zest and simmer for 3 more minutes. Add mussels and stir them around a bit. Increase the heat to high and cover the pot and cook until all the mussels have opened about 3-5 minutes.
