Slow Cooker Spicy Shredded Chicken Lettuce Wraps with Avocado

This makes a great easy dinner or lunch. Just throw everything in the slow cooker for a few hours and then enjoy!

Slow Cooker Shredded Chicken Lettuce Wrap Tacos with Avocado

Serves 4

Ingredients:

6-8 boneless, skinless chicken thighs

1 cup tomato salsa (storebought or homemade, recipe here)

1 onion, sliced

1 can (4 oz.) diced green chiles

1 Tbsp. Tapitio or hot sauce

2 Tbsp. lime juice

Avocados

Sliced red onion

Lime slices

Shredded cheddar cheese

1 large head iceberg lettuce

 

Directions:

Add chicken, salsa, onions, green chiles, Tapitio, and lime juice to slow cooker. Cook on low setting for about 5 hours. Shred with fork. Serve chicken in lettuce tacos with avocado, red onion, cheese, and with lime.
