Armagnac Chicken


Easy to make and very tasty!

Armagnac Chicken


1 Tbsp. olive oil

4 small potatoes, halved

1 onion, sliced

2 carrots, sliced on the diagnol

1 thyme sprig

1 rosemary sprig

1 bay leaf

2 lb. chicken thighs

½ cup Armagnac



Preheat oven to 450 degrees. Place pot over medium heat and add oil. Add potatoes, onions, and carrots to pot and season with salt and pepper. Cook for 2 minutes then add herbs and chicken. Season with more salt and pepper. Pour in Armagnac. Cook for 1 minute. Cover pot and place into oven for 1 hour.
