Almond Cod Meuniere

The original recipe called for flounder, but I didn’t feel like hunting that down, so I just used cod. Luckily it worked out great! The almond crust came out nice and crispy and the fish soft and delicate. I served it with some potatoes cube, boiled, then fried and some steamed broccoli with lemon zest.

Almond Cod Meuniere

Serves 2

Ingredients:

1/3 cup ground almonds

1 Tbsp. flour

zest of half a lemon

2 4 oz. cod fillets

1 egg yolk, lightly beaten

2 Tbsp. butter

Lemon wedges

Sliced almonds

Parsley chopped

Directions:

Mix ground almonds, flour, and zest together and season with salt and pepper. Brush fillets with egg yolk. Dip coated side of each fillet into the nut mixture. Heat nonstick skillet over medium heat. Add 1 tablespoon of the butter and heat till the butter turns brown, about 3 minutes. Add fillets into skillet nut side down. Cook for 3 minutes, until coating is brown. Add more butter and flip fillets. Season with salt and pepper. Spoon butter on top of fillets and cook for 2 minutes. Remove fillets from pan and squirt with lemon juice and top with almond slices and parsley.
