Mini Raspberry Cobbler

Easy dessert and best served with some ice cream.

Mini Raspberry Cobbler

Serves 2

Ingredients:

½ cup raspberries

1 Tbsp. butter, room temperature

2 Tbsp. sugar

¼ cup flour

2 Tbsp. milk

½ tsp. baking powder

1/8 tsp. salt

¼ tsp. vanilla extract

2 Tbsp. sugar

2 Tbsp. warm water

Directions:

Preheat oven to 350 degrees. Place raspberries in ramekin. In a medium bowl mix butter, sugar, flour, milk, baking powder, salt and vanilla. Spoon over fruit and spread evenly. Sprinkle sugar on top and pour water evenly. Bake for 30 minutes, until topping is golden brown. Serve with ice cream or whipped cream.
