A French style hamburger that was really tasty. I would try to buy nice quality ground beef (ground sirloin if possible) for this recipe. Some good brioche buns too!
½ red onion, finely chopped
½ cup water
½ tsp. ground coriander
1 Tbsp. butter
2 Tbsp. oil-packed sun-dried tomatoes, chopped
2 Tbsp. capers
2 Tbsp. tarragon
¼ cup parsley
¾ lb. ground sirloin
1 Tbsp. canola oil
1 oz. parmesan, cut into ribbons
2 hamburger buns, toasted
1 dill pickle, cut into ribbons
In a small saucepan stir together onion and water. Add coriander and butter, season with salt and pepper and bring to a boil. Lower the heat to medium-low and simmer for about 30 minutes. Set marmalade aside. In a mini food processor mix together tomatoes, capers, cornichons, tarragon, and parsley. Add this mixture to ground sirloin and mix everything together lightly adding a bit more salt and pepper. Form patties, ¾ inch thick. Heat a skillet over medium heat and add oil. When oil is hot add patties cooking them 2-3 minutes each side. Top immediately with parmesan cheese when cooked. Spread the bottom buns with onion marmalade and dill pickles. Place patties on bun and enjoy.
