Sirloin Gyros

Great dinner! I was surprised how tasty sirloin can get after marinating. I served the gyros with green beans mixed with vinaigrette and feta cheese.

Sirloin Gyros

Serves 4

1 hour 15 minutes

Sirloin marinade:

4 garlic cloves, smashed

1 lemon, juiced

2 tsp. red wine vinegar

2 Tbsp. olive oil

2 Tbsp. greek yogurt

1 tsp. oregano, chopped

1 lb. top sirloin filet

Tzatziki Sauce:

1 cup greek yogurt

1 cucumber, peeled and grated

2 garlic cloves, minced

½ tsp. white wine vinegar

1 Tbsp. lemon juice

1 Tbsp. olive oil

1 Tbsp. olive oil

4 pita breads, toasted

2 Roma tomatoes, diced

1 red onion, sliced

In a large plastic bag combine all the ingredients, salt and pepper for the sirloin marinade. Place in refrigerator for at least 1 hour. In a small bowl, combine all the tzarziki sauce ingredients plus salt and pepper. Place in refrigerator for at least 30 minutes. Heat olive oil in skillet over medium high heat. Add sirloin flipping once, until medium rare, about 4-5 minutes per side. Let the meat rest 5 minutes before carving into thin slices. To assemble, top each pita bread with sirloin, tzatziki sauce, tomatoes and red onion.
