Baked Breakfast Taquitos

I had my doubts when I was first making these if they would be any good. But they were delicious and even good a day later. I highly recommend trying them out.

Baked Breakfast Taquitos

Ingredients:

2 slices bacon, diced, cooked

6 eggs

¾ cup cheddar cheese, grated

¼ cup salsa

2 Tbsp. green onions, minced

2 tsp. hot sauce

6 flour tortillas

cooking spray

½ cup Greek yogurt

juice half a lime

¼ tsp. chipotle chili powder

Directions:

Preheat oven to 425 degrees. After cooking bacon, save fat in non-stick skillet. Over medium-low heat crack eggs into skillet and slowly scramble. Cook till eggs are beginning to set but still a bit runny and undercooked. Take off heat and place in bowl. Mix with cheese, salsa, bacon, green onions, hot sauce, salt, and pepper. Place 1/3 cup of egg mixture into the center of each tortilla and roll up (you can microwave the tortillas if you need them more malleable). Place on baking sheet seam side down and ½ inch apart. Spray taquitos with cooking spray and sprinkle a little salt on them. Bake for 15 minutes or until edges are brown and crisp. While taquitos are baking combine yogurt, lime juice, chili powder, and salt for dipping sauce. Let taquitos cool 5 minutes and serve with dipping sauce.
