Fresh Mozzarella and Basil Pizza

For pizza dough:
1 cup warm water (~110 degrees)
1/8 tsp. sugar
¼ oz. active dry yeast
3 cups flour
1 ½ tsp. salt
1 Tbsp. olive oil
6 plum tomatoes, sliced
12 oz. fresh mozzarella, sliced
6 oz. prosciutto, cut into strips
Freshly ground pepper
Stir together water and sugar. Sprinkle with yeast and let stand 5 minutes or until mixture is bubbly. Mix together flour, salt, yeast mixture and olive oil in large bowl. Knead dough until fully combined and smooth. Place dough in large bowl coated with oil. Cover with a clean cloth and let rise in a warm, draft free area for 1 hour. Punch dough down and let rise again covered with cloth for 30 more minutes. Cut dough into 6 equal portions, shaping each into a ball. Shape each pizza dough into a 6-8 inch circle on a lightly floured surface. Brush oil over dough. Cover loosely with plastic wrap and let rise for 20 minutes. Pre-heat oven to 450 degrees. Layer slices of tomato, mozzarella, prosciutto, basil and pepper. Place pizza on baking sheet and bake for 10 minutes or until crust is golden.
