Stuffed Foccacia with Roasted Red Pepper Vinaigrette

Delicious sandwich with some green beans tossed with oil, vinegar and some herbs for a light summer meal.  Serve with a chilled Rose and have a wonderful evening.

Stuffed Focaccia with Roasted Red Pepper Vinaigrette

Ingredients:

1/2 cup olive oil

1/4 cup red wine vinegar

1 roasted bell pepper

1 tsp. basil, chopped

1 tsp. oregano, chopped

1 tsp. parsley, chopped

1 9-inch round loaf focaccia

3 oz. goat cheese

1 roasted chicken breast, cubed

2 cups mixed salad greens

½ pint grape tomatoes, halved

Directions:

Mix in a blender oil, vinegar, bell pepper, herbs, salt and pepper. Cut focaccia in half horizontally, using a serrated knife. Spread goat cheese on cut sides evenly. Place chicken in bowl and toss with vinaigrette. Top bottom half of bred with chicken mixture, layer with salad greens and tomatoes. Cover with top of bread and cut into wedges.
