Cornmeal Crusted Blue Cheese and Onion Jalapeno Poppers

I wanted to make jalapeno poppers, and needed to get rid of some blue cheese. This was a great combination. The cornmeal gives it a ridiculously crispy crust. if you don’t want to use cornmeal, you could easily swap out for regular bread crumbs.

Cornmeal Crusted Blue Cheese and Onion Jalapeno Poppers

10 poppers

Ingredients:

1 Tbsp. butter

½ onion, sliced

8 oz. cream cheese, room temperature

3 Tbsp. blue cheese crumbles

2 green onions, sliced

5 jalapenos, halved, deseeded

½ cup flour

2 eggs, beaten

½ cup cornmeal

Oil for deepfrying

Directions:

Melt butter in skillet over medium-low heat. Add onions and caramelize for 20 minutes. Mix together onions, cream cheese, blue cheese, green onions, salt, and pepper. Stuff jalapeno halves with filling. Cover in flour, then eggs, then cornmeal. Heat oil to 375 degrees and deep fry for 3 minutes or until golden.
