Thai Pork Salad

I wasn’t sure about this recipe when I first saw it, but thought I would give it a shot. I was completely floored by how good it was and how simple. I definitely will be making this again for a lunch or a light dinner.

Thai Pork Salad (Southern Living All-Time Favorite Recipes Volume I)

Serves 6

Ingredients:

2 Tbsp. rice vinegar

2 Tbsp. soy sauce

2 tsp. brown sugar

2 Tbsp. vegetable oil

1 broccoli stem, julienned

1 lb. ground pork

Cooking Spray

1 lime juiced

¼ cup mint leaves, chopped

1 Tbsp. brown sugar

1 Tbsp. fish sauce

3 green onions, chopped

1 tsp. ginger, minced

1 tsp. sesame oil

½ tsp. siracha sauce

Cucumber curls

Jicama, chopped

Directions:

First make Asian slaw by mixing together vinegar, soy sauce, brown sugar, oil and broccoli. In a large skillet coated with cooking spray, sauté pork over medium-high heat for 8-10 minutes. Drain and cool. Stir together pork, lime juice, mint, sugar, fish sauce, green onions, ginger, sesame oil, and siracha sauce. Serve on top of Asian slaw and top with cucumber curls and chopped jicama.
