Healthy lunch that tasted pretty good. I definitely will be making this again. Making lentils from scratch is the way to go.
Marinated Garden Lentil Pita
½ cup cooked lentils (from a can or homemade recipe below)
1 carrot, chopped
1 celery stalk, chopped
1/4 cup red bell pepper, chopped
2 Tbsp. olive oil
1 Tbsp. red win vinegar
1 tsp. Italian seasoning
1 whole-wheat pita pocket, toasted and cut in half
Mix together lentils, carrot, celery, bell pepper, oil, vinegar, seasoning, salt and pepper. Stuff pita with mixture.

1 cup French green lentils
1 small onion
1 medium carrot, cut into 4 pieces
1 celery stalk cut into 4 pieces
1 garlic clove, smashed
1 bay leaf
3 ½ cups chicken broth
Put lentils in strainer and rinse under water. Toss onion, carrot, celery, garlic, and bay leaf into medium saucepan. Pour in broth and lentils, bring to a boil. Lower heat to simmer and cook for 30 minutes, or till lentils are tender. Season with salt and pepper. Drain lentils and remove herbs and vegetables.
