Easy and really tasty breakfast. I scramble my cheese a bit in the eggs so it melts some more. And avocado on anything is good!
Tex-Mex Breakfast Sandwich
1 Tbsp. butter
2 slices cheddar cheese
2 multigrain english muffins, toasted
1 avocado, sliced
2 Tbsp. salsa (storebought or homemade recipe here)
Heat skillet with butter over medium heat. Crack eggs in skillet and scramble. When eggs are almost finished top with cheddar cheese. Move eggs and cheese onto English muffin. Top with avocado and salsa.
