Easy delicious healthy dinner!

Herbed Turkey Strips with Roasted Peppers and Beans

Ingredients:

1 – 2 lbs. turkey cutlets

1 tsp. parsley

1 tsp. oregano

1 tsp. thyme

1 tsp. sage

1 ½ Tbsp. olive oil, divided

Juice of 1 lemon

2 garlic cloves, minced

1 ½ cup cannellini beans (canned or recipe here)

1 roasted red bell pepper, sliced

2 Tbsp. pine nuts, lightly toasted

1 tsp. lemon zest

¼ cup chopped parsley

Directions:

Stir together turkey, herbs, ½ Tbsp. oil, lemon juice, garlic, salt and pepper. Chill for 30 minutes. Cook turkey in batches in skillet over medium heat 3 minutes on each side. Remove turkey from skillet and add beans and bell pepper. Cook over medium heat for 5 minutes. Arrange turkey on plate, top with bean mixture, pine nuts, lemon zest and parsley.
