Buffalo Chicken Poppers with Avocado Bleu Cheese Dip + Crescent Rolls

This is a great recipe to have to bring a party or potluck. I found the avocado bleu cheese dip really interesting. You can use store-bought crescent dough, but making it from scratch is pretty easy even if it takes a long time rise. Also, you could substitute sour cream for the creme fraiche, it is just what happen to be in my refrigerator that day.

Buffalo Chicken Poppers with Avocado Bleu Cheese Dip
16 Poppers
Ingredients:
4 oz. cream cheese
1 Tbsp. dill, chopped
1 Tbsp. green onions, chopped
1 Tbsp. parsley, chopped
1 garlic clove, minced
1 ½ cups cooked chicken, cubed
4 Tbsp. buffalo wing sauce
1 recipe of crescent rolls (see below) or 1 tube crescent roll dough (8-count)

1 avocado
½ cup crème fraiche
¼ crumbled blue cheese

Directions:
Preheat oven to 400 degrees. Mix together cream cheese, herbs, garlic, salt and pepper in a small bowl. Mix chicken with buffalo sauce in another small bowl. Lay half crescent roll out flat. Place 1 teaspoon of cream cheese mixture, one spoonful of chicken. Close crescent roll around filling and pinch to seal. Place on baking sheet. Repeat. Bake for 12 -15 minutes until golden. Mix avocado, crème fraiche, bleu cheese, salt and pepper for dip.

Golden Crescent Rolls
Makes 8 rolls

Ingredients:
1 package active dry yeast (1/4 oz.)
¼ cup + 2 Tbsp. warm water (110 degrees)
¼ cup sugar
½ tsp. salt
1 egg
¼ cup butter, room temperature
2 cups flour

Directions:
Dissolve yeast in warm water. Stir in sugar, salt, egg, butter and flour. Beat until smooth. Scrape dough from side of bowl. Knead dough, then cover it and let rise until double (about 1 ½ hours). Punch down dough. Roll into a 12-inch circle. Cut into 8-10 wedges. Roll up each wedge starting with the wide end. Place rolls on baking sheet and let rise until double (about 1 hour). Bake at 400 degrees for 12-15 minutes or until golden.
