Chicken in a Pot


This is a terrible picture, but a delicious one pot wonder. It makes a great presentation with the lid being broke open and the aromas of chicken, vegetables and garlic pouring out. Definitely dip the pizza dough right into the broth.

Chicken in a pot


3 Tbsp. olive oil

2 potatoes, chopped

16 pearl onions

8 carrots, quartered

4 celery stalks, quartered

2 garlic heads, cloves separated

3 thyme sprigs

3 parsley sprigs

2 rosemary sprigs

¼ cup preserved lemon, rinsed and chopped

1 chicken, about 4 lbs, cut into 8 pieces

1 cup chicken broth

½ cup white wine

pizza dough (recipe here)


Preheat oven to 450 degrees. Heat 2 Tbsp. of the olive oil in a large pot or dutch oven. Season chicken with salt and pepper and brown on all sides. Remove chicken and add 1 Tbsp. more of olive oil. Add the vegetables and garlic to the pot and season with salt and pepper. Saute until vegeables are brown on all sides. Add herbs and preserved lemons. Tuck chicken into vegetables. Add wine, reduce for a few minutes. Add broth. Place pizza dough on the rim of the pot securing the lid. Slide pot into oven and bake for 55 minutes.
