Spinach, Bacon, and Onion Dip


This was a great dip, when I gave it to all my friends it was gone in no time. It is a bit heavy so pace yourself.

Spinach, Bacon, and Onion Dip

Serves 6


2 slices bacon, chopped

½ onion, diced

1 tsp. flour

10 oz. frozen spinach

½ cup whole milk

¼ cup sour cream

4 oz. cream cheese

¼ cup Parmesan cheese, grated

Crostini or pita chips, for serving


Preheat oven to 350 degrees. In saucepan, cook bacon over medium heat, until browned and crisp, about 10 minutes. Drain bacon on paper towels. Add onion to the pan, season with salt and pepper, and cook until tender, about 8 minutes. Add flour and cook for 30 seconds. Add spinach, milk, sour cream and cream cheese. Cook, stirring, until cream cheese melts, about 3 minutes. Stir in bacon and half of Parmesan. Transfer mixture into about 1 quart size baking dish and top with rest of Parmesan. Bake until bubbling, 15 minutes. Heat broiler and broil until brown, about 3 minutes. Let sit 5 minutes before serving. Serve with crostini, crackers or pita chips.
