Cheddar Cheese Panini with Pancetta and Hot Mustard + Spring Slaw


This was my first time using fava beans. It was so much work to peel them. They don’t have one shell you have to peel but two! They were also excellent and I wish I had bought more. Also, try to buy good pancetta, it really makes a difference.

Cheddar Cheese Panini with Pancetta and Hot Mustard

Serves 2


8 thin slices pancetta

4 slices country bread

2 tsp. hot mustard

2 slices cheddar cheese

Olive oil


Preheat oven to 400 degrees. Line baking sheet with parchment. Lay pancetta in single layer and place in oven until crispy, about 10 minutes. Drain on paper towels. Heat Panini press. Lay out 4 slices of bread, spread mustard, cheese, and pancetta. Brush olive oil on top of sandwiches. Place in Panini press and cook until well browned about 5 minutes. Serve warm.

Spring Slaw

Serves 4


1 cup fava beans, shelled

½ cabbage, sliced

1 cup arugula

¼ cup micro daikon radish sprouts

1 Tbsp. mint, chopped

¼ cup hazelnuts, chopped

1 Tbsp. honey

1 tsp. Grainy dijon mustard

¼ cup cider vinegar

1 lemon, juiced

1 tsp. cumin

¾ cup extra-virgin olive oil


For dressing mix together honey, cider vinegar, mustard, lemon juice, cumin, olive oil, salt and pepper. For salad layer arugula, cabbage, and fava beans. Top with sprouts, hazelnuts, mint and dressing.
