This makes a great lunch! I had no idea how good fried sunchokes were till I tried this. Seriously this recipe is a keeper.
Turkey Sandwich with Sprouts and Avocado
1 Tbsp. whole grain Dijon mustard
¼ cup mayonnaise
1 garlic, minced
Multi-grain bread, toasted
Red onion, thinly sliced
Mix mustard, mayonnaise, and garlic together. Spread on both slices of bread. Layer turkey, provolone, sprouts, avocado and red onion onto sandwich.
Rosemary Sunchoke Chips
4 sunchokes, thinly sliced
1 rosemary sprig
Vegetable oil for frying
Heat vegetable oil to 375 degrees. Fry sunchokes for 3-5 minutes, until golden brown and crispy. Add rosemary while frying sunchokes. Drain everything on paper towel and add salt. Break up rosemary onto sunchokes.
