Bacon Cheeseburger + Thousand Island Dressing + Kale Chips


I made my hamburger buns from scratch, but they didn’t quite come out right. They were a little dense, but these burgers were so delicious I had to post them. I made some thousand island dressing, which is really easy to throw together, and makes such difference.

Bacon Cheeseburgers

Serves 2


½ lb. ground beef

2 tsp. Worcestershire Sauce

2 slices American cheese

2 hamburger buns, toasted

¼ cup thousand islands dressing

4 slices bacon, cooked

Red onion, thinly sliced



Mix beef, Worcestershire sauce, salt and pepper and make into two patties. Heat grill pan over high heat and cook patties 3 minutes on each side, on the last minute add cheese. Dress both sides of buns with thousand island dressing. Place burger on bun and top with bacon, lettuce and onion.

Thousand Island Dressing

Makes a little over half a cup


½ cup mayonnaise

2 Tbsp. ketchup

1 Tbsp. vinegar

2 tsp. sugar

2 tsp. sweet pickle relish

1 tsp. minced white onion

1 tsp. Worcestershire sauce

1 tsp. hot sauce


Mix all ingredients together with salt and pepper.

Kale Chips


1 head of kale

2 Tbsp. olive oil


Preheat oven to 275 degrees. Remove rib from kale and cut into pieces. Mix with olive oil and salt. Bake for 20 minutes or until crisp.
