Turkey Piccata


This is one of those classic dishes you should have in your back pocket. It is simple and really satisfying. I served the turkey with garlic swiss chard (like this recipe here) and some linguine.

Turkey Piccata

Serves 2


½ lb. turkey cutlets

1 ½ Tbsp. flour

½ tsp. paprika

2 Tbsp. olive oil

¼ cup white wine

1 Tbsp. capers

lemon juice

chopped parsley


Combine flour with paprika, salt and pepper. Dredge cutlets in flour mixture. Cook turkey cutlets in olive oil over medium-high heat 2 minutes on each side or until browned. Transfer cutlets to serving platter to keep warm. Add wine to skillet, bring to a boil, stirring constantly. Add capers and cook for 1 minute. Pour over cutlets. Top with lemon juice and parsley.
