Easy breakfast for those morning’s on-the-go. I love the cheese in the hash browns.

Bird’s Nest Cups

Makes 12 Nests

Ingredients:

1 russet potato, shredded, rinsed & dried

1/3 cup shredded cheddar

4 bacons slices, cooked and crumbled

12 eggs

Directions:

Preheat oven to 425 degrees. Grease muffin tin with oil. Mix potato with cheese, salt and pepper. Divide into muffin tin, making sure to press down. Bake for 15-18 minutes. Remove muffin tin from oven. Lower oven temperature to 350 degrees. Crack egg into each cup. Top with bacon. Bake in oven for 13-16 minutes.
