Southwest rub rib eye + Grilled corn with jalepeno lime butter

Who doesn’t love a steak dinner? This includes a side of spicy buttered corn.

Southwest Rub Rib Eye

Ingredients:

1 bone-in rib eye

1 Tbsp. olive oil

1 Tbsp. chili powder

1 tsp. paprika

1 tsp. cayenne

1 tsp. cumin

Directions:

Rub steak with olive oil, chili powder, paprika, cayenne, cumin, salt and pepper. Heat grill to high heat. Grill steaks 3 minutes per side, then lower grill to low and cover for 8 minutes.

Grilled Corn with Jalapeno Lime Butter

Serves 4

Ingredients:

1 stick of butter, softened

1 jalapeno pepper, seeded, and minced

1 Tbsp. lime zest

1 tsp. lime juice

4 ears fresh corn, husks removed

1 Tbsp. olive oil

Directions:

Combine butter, jalapeno, lime zest and juice in a bowl. Cover and chill till ready to serve. Rub corn evenly with olive oil, sprinkle with salt and pepper. Grill over high heat covering lid, turning often for 15 to 20 minutes or until tender. Serve with jalapeno butter.
