Gin and Tonic Graved Lax

I feel that Graved Lax seems more complicated than it is. The only hard part is finding fresh salmon, then throw the ingredients together and wait a few days. I served the salmon with cucumber and onions, but just plain is delicious as well.

Gin Tonic Graved Lax

Ingredients:

1 lb. fresh salmon

1 cup gin

½ cup tonic water

1 lime, sliced

juice from one lime

1 Tbsp. fennel seeds

1 cup salt

2 cups sugar

Directions:

Marinate salmon with gin, tonic water, sliced lime, and lime juice. Add fennel, salt, and sugar. Marinate for 36 hours. Dry salmon with paper towels. Slice and serve.
