Sorry for the hiatus, it was a very busy time for me. I will try to be better about posting, but first I need to catch up. I have a few photos and recipes that have been waiting to be posted. I will start with an easy lunch with beets and goat cheese.
Beets and Goat Cheese Salad
Beets cooked and diced (red and yellow)
Green onions, sliced
Apple cider vinegar
Mix vinegar, oil, honey, salt and pepper. Mix beets, crumbled goat cheese and vinaigrette. Top with green onions.
