Zucchini Sticks with Sweet Onion Dipping Sauce


Great snack/appetizer the sauce is amazing and totally makes it.

Zucchini Sticks with Sweet Onion Dip


3 medium sized zucchini

1 Tbsp. butter

1 medium sweet onion, sliced

2 Tbsp. apple cider vinegar

2 Tbsp. honey

1 Tbsp. Dijon mustard

1 cup mayonnaise

1 cup flour

1 cup panko bread crumbs

2 eggs, beaten

Oil for frying


Cut each zucchini into 3’’ sticks about the size of your finger. Place zucchini in colander bowl over sink and sprinkle with 1 tablespoon of salt. Allow zucchini to remove water for 1 hour or longer. Meanwhile, melt 1 tbsp. butter over medium heat and add onions. Turn heat to low and cook for 30 minutes or so until completely caramelized. In a food processer add caramelized onions, vinegar, honey and mustard. Pulse until homogenous. Mix onion mixture with mayonnaise. Place in fridge till needed. Have a bowl with bread crumbs, another with egg, and another with flour. Place zucchini sticks in flour, then egg, then bread crumbs. Heat oil to 425 degrees. Fry zucchini sticks for a few minutes till golden brown, and place on paper towels to remove excess oil. Serve with sweet onion dip.
