Easy to make and delicious, this makes a a great breakfast or appetizer.
Mini Spinach Quiche
1 sheet puff pastry
8 oz. cream cheese, softened
1 small onion, chopped
3 cups spinach
1 cup mozzarella cheese, shredded
Heat oven to 35o degrees. Spray no-stick cooking oil on muffin tin. Cut puff pastry into 12 squares. Press each square into a muffin cup. In a food processor place spinach, pulse until spinach is fully chopped. Add cream cheese, eggs, onion, mozzarella, salt and pepper. Fill each muffin cup with egg mixture. Bake for 15 to 20 minutes till puff pastry is golden brown and eggs are set. Remove from pan and enjoy.
