Chicken Breast Lombardy


Really delicious and comforting main dish that everyone will enjoy. I served my chicken lombardy with steamed brocoli with parmesan cheese and noodles.


Chicken Breasts Lombardy

Serves 2

1 hour 15 minutes


½ onion, diced

1 cup sliced mushrooms

1 Tbsp. butter,

2 boneless, skinless chicken breasts

2 Tbsp. flour

1 Tbsp. butter

¼ cup marsala

¼ cup chicken broth

¼ cup shredded mozzarella

¼ cup shredded parmesan

1 green onion, sliced


Cook onions in butter over medium low heat until soft, about 5 minutes. Add mushrooms and cook until tender about 5 more minutes. Remove from heat and set aside. Place chicken between plastic wrap and pound thin to 1/8-inch thick. Dredge chicken in flour with salt and pepper. Heat butter in skillet over medium heat and cook chicken 4 minutes on each side until golden. Reserve pan drippings. Add marsala wine to skillet and broth. Bring to a boil, then reduce heat and simmer for 10 minutes. Stir salt and pepper. Place chicken in baking dish with mushrooms on top then pour sauce over chicken. Combine cheese and green onions and sprinkle over chicken. Bake uncovered at 450 degrees for 12 minutes or until cheese melts. Serve.
