Fried Okra Salad

A great way to use okra.

 

Fried Okra Salad

Serves 2

Ingredients:

¼ cup lemon juice

3 Tbs. chopped basil

1 tsp. paprika

¼ cup olive oil

 

1 cup self-rising yellow cornmeal

½ lb. okra

1 cup buttermilk

½ head bibb lettuce

1 tomato, chopped

½ sweet onion, thinly sliced

1 green bell pepper, chopped

3 bacon slices, cooked and crumbled

Directions:

Combine lemon juice, basil, paprika, salt and pepper. Add oil in steady stream whisking to combine.

Combine cornmeal and salt. Dip okra in buttermilk then cornmeal mixture. Heat oil to 375 degrees. Fry okra in batches until golden about 2 minutes. Drain on paper towels. Arrange lettuce in bowl. Top with tomatoes, onion and bell pepper. Add dressing and toss to coat. Top with fried okra and crumbled bacon.
