Black Bean Soup

Simple soup for anytime.

 

 

Black Bean Soup

 

Serves 8

13 hours 15 minutes

Ingredients:

1 (16 oz.) package of dried black beans

3 quarts chicken stock

½ onion

½ green bell pepper

6 garlic cloves, minced

2 Tbsp. olive oil

1 ½ tsp. sugar

1 tsp. oregano

1 tsp. cumin

minced red onion

Directions:

Rinse and soak beans in water to cover 8 hours or overnight. Rinse and drain beans. Bring beans and chicken stock to a boil. Cover, reduce heat to low, and simmer 3 hours. Process onion and bell pepper in food processor until smooth. Saute garlic in hot oil in a large skillet over medium heat 1 minute. Add onion mixture and cook for 4 minutes stirring constantly. Add onion and garlic mixture to soup. Add sugar, oregano, cumin, salt and pepper. Summer, uncovered, 1 ½ to 2 hours until beans are tender and soup is thick. Garnish with minced red onion.
