Salmon Burgers + Roasted Shiitake Mushrooms

Easy dinner or lunch that keeps you full but not overly stuffed.

 

Salmon Burgers

Serves 2

Ingredients:

¼ cup red bell pepper, diced

3 Tbsp. bread crumbs

1 clove garlic, minced

2 green onions, sliced

½ lb. salmon, finely chopped

1 egg

1 tsp. soy sauce

1 tsp. hot sauce

1 Tbsp. vegetable oil

 

wasabi mayonnaise (here is a recipe)

whole wheat burger buns

green lettuce

sliced onions

sliced tomatoes

Directions:

In a medium mixing bowl, combine bell pepper, bread crumbs, garlic, green onions, egg, soy sauce, hot sauce and salmon. Form in two patties. Add vegetable oil to a skillet over medium high heat. Add patties cook about 5 minutes per side. Place patties on buns with wasabi mayonnaise, lettuce, onion and tomato.

Roasted Shiitake Mushrooms

 

Ingredients:

½ lb. shiitake mushrooms, sliced

2 Tbsp. soy sauce

2 tsp. sesame oil

1 tsp. hot sauce (siracha)

2 green onions, sliced

 

Directions:

Places mushrooms in small roasting pan and mix with soy sauce, sesame oil and hot sauce. Let marinate for at least 20 minutes. Heat oven to 400 degrees and add mushrooms to oven. Cook for 15 minutes then mix in green onions.
