Quick soup I put together for dinner. Toast some bread for croutons.
Broccoli and Cheddar Soup
2 Tbsp. butter
1 onion, diced
4 cups water, or as needed
1 head of broccoli, split into florets
2 bay leaves
2 cups shredded cheddar cheese
Melt butter over medium- low heat in soup pot. Add onions, cook till translucent, about 10 minutes. Add broccoli, water (enough to just cover broccoli) and bay leaves, bring to a boil. Simmer until broccoli is tender about 20 minutes. Using an immersion blender blend until all chunks are gone. Add salt and pepper as needed. Turn heat low and add cheddar cheese. Top with croutons.
