BBQ Pork Loin + Grated Carrot Salad + Potato Salad

Delicious dinner!

 

BBQ Pork Loin

Ingredients:

2 ½ lb. boneless pork loin

½ cup BBQ sauce (store bought or homemade)

½ red onion, sliced

1 garlic clove, minced

1 Tbsp. olive oil

Directions:

Mix put pork loin in plastic bag and add BBQ sauce, onion, garlic, oil, salt and pepper. Marinate for at least 1 hour. Preheat oven to 400F. Place pork loin with onions on roasting pan. Cook for about 50 minutes or until internal temperature about 145F. Let rest about 10 minutes before slicing.

 

Grated Carrot Salad

Ingredients:

1 lb. carrots

1 Tbsp. Dijon mustard

1 Tbsp. honey

¼ cup rice wine vinegar

¼ cup grapeseed oil

¼ cup chopped walnuts

Directions:

Make dressing in  food processor by mixing mustard, honey, vinegar, oil, salt and pepper. Grate the carrots with the grating blade of a food processor. Mix dressing with carrots and add walnuts.

Potato Salad

Ingredients:

1 lb. baking potatoes (2 large)

1 hard-cooked egg, grated

¼ cup mayonnaise

1 tsp. spicy brown mustard

Directions:

Boil potatoes for 40 minutes, until tender. Drain and cool. Cut into 1-inch cubes. Stir together potatoes and egg, add mayonnaise, mustard, salt and pepper.
