Lemon Cupcakes with Limoncello-Cream Cheese Frosting

Lemon Cupcakes with Limoncello-Cream Cheese Frosting (Blog: The Comfort of Cooking)

Ingredients:

Cupcakes:

1 ½ cups flour

1 tsp. baking powder

½ tsp. salt

½ stick butter, room temperature

2 oz. cream cheese, room temperature

1 cup sugar

3 eggs

2 Tbs. limoncello

½ cup buttermilk

¼ lemon juice

Zest of one lemon

 

Lemon Curd:

Zest of 2 lemons

½ cup lemon juice

½ cup sugar

1 egg

1 egg yolk

 

Frosting:

½ stick butter, room temperature

4 oz. cream cheese

1 Tbsp. limoncello

2 cups powder sugar

 

Directions:

Preheat oven to 350F. In medium bowl mix flour, baking powder and salt. In another bowl mix butter, cream cheese and sugar. Add eggs to butter mixture one at a time mixing well after each addition. Add limoncello and mix well. Slowly add flour and buttermilk alternating until incorporated. Add lemon juice and zest. Divide the batter in 12 muffin tins lined with cupcake liners. Bake for 20 minutes or toothpick comes out clean. In a heavy medium saucepan, stir together lemon zest, juice, and sugar and bring over medium heat. In a bowl whisk together egg and egg yolk. Add some of the lemon juice to temper the eggs and then scrape mixture back into saucepan whisking constantly until lemon curd thickens. Remove from heat and cool completely. In a bowl beat together butter and cream cheese. Add limoncello.Gradually add the powdered sugar and beat until incorporated. Cut a hole in each cupcake. Fill cavity with lemon curd replace top and frost.
