Baked Macaroni and Cheese


Easy cheesy dinner. I served my mac and cheese with an arugula, endive and fennel salad.


Baked Macaroni and Cheese


½ package (4 oz.) shell pasta

2 Tbsp. butter

2 Tbsp. flour

pinch of cayenne

1 clove of garlic, minced

½ cup half and half

½ cup milk

3 oz. extra sharp cheddar cheese, shredded

5 oz. sharp cheddar cheese

½ cup breadcrumbs


Boil pasta and cook according to package directions, drain and set aside. Heat oven to 375 degrees. Melt butter in pot over medium heat. Gradually whisk flour till smooth. Cook whisking constantly for 2 minutes. Stir in salt, pepper and cayenne. Gradually whisk half and half and milk. Cook till thickens about 8 minutes. Add shredded cheese. Mix with pasta and place in baking dish. Cover with breadcrumbs and bake for 30 minutes.
