Lemon Poppy Seed Pancakes



It is surprising how extra delicious some poppy seeds can make pancakes. If you like pancakes this is a great recipe. I like my pancakes covered with real maple syrup from Vermont.


Lemon Poppy Seed Pancakes 


1 cups flour

1 tsp. baking powder

½ tsp. baking soda

1/3 cup sugar

¼ tsp. salt

1/3 cup poppy seeds

zest of 4 lemons

2 cups buttermilk

2 eggs, beaten

2 Tbsp. melted butter


Maple Syrup



Combine flour, baking powder, baking soda, sugar, and salt in large bowl. Add buttermilk, eggs, poppy seeds and lemon zest and mix until just combined. Don’t over mix. Heat pan over medium heat and add butter. Pour 1/3 cup of batter in skillet to form pancake. Wait till bubbles begin to form, then flip. Cook till both sides are golden. Repeat with remaining batter and serve with real maple syrup and butter.
