Mushroom Soup



Really easy delicious mushroom soup great for any weekday!


Mushroom Soup


1 Tbsp. butter

1 onion, chopped

1 garlic clove, chopped

1 lb. white mushrooms, sliced

½ cup white wine

1 parsley sprig

1 rosemary sprig

4 cups chicken broth

1 scallion, sliced

1 Tbsp. parsley, minced


Melt butter in soup pot over low heat. Add onions, garlic, salt and pepper. Cook for about 5 minutes till vegetables are soft. Add the mushrooms and raise to medium heat and cook for another 3 minutes. Increase heat to high and cook till liquid evaporates. Add wine and allow to evaporate as well. Toss the herbs into the pot and add the broth. Bring to a boil then lower the heat and cover the pot almost completely. Simmer for 20 minutes. Pull out rosemary if possible. Using an immersion blender puree soup till smooth. Taste and add salt and pepper as necessary. Top with sliced scallions and parsley and serve.
