White Bean Pizza Sliders

Great vegetarian option for lunch. I normally don’t care that much about no eating meat, but I do like a challenge. I set out to make a delicious slider without using meat and I think it came out great.

 

White Bean Pizza Sliders

Makes 8 sliders

Ingredients:

1 can of white beans or 1 ½ cups cooked white beans

¼ cup onion chopped

½ cup shredded carrot

¼ cup parsley

1 cup breadcrumbs

1 egg

1 Tbs. mayonnaise

1 Tbs. olive oil

2 tomatoes, sliced

1 cup, shredded mozzarella cheese

8 large basil leaves

8 slider buns

Directions:

Place beans, onion, carrot, parsley, breadcrumbs, egg and mayonnaise into food processor. Add salt and pepper and Pulse until everything is complete mixed (add breadcrumbs if too wet or olive oil if too dry). Make into patties, about the size of the buns. Heat oil over medium heat in a skillet. Cook patties till brown, about 5 minutes, then flip and cook for another 4 minutes till other side is brown. Place basil leaf, slice of tomato, and sprinkle some mozzarella cheese on to one side of slider bun. Toast until cheese melts and toast other slider side till brown. Place cooked patty on buns and enjoy!
