Fish Sandwich + Carrot Salad

I made this for lunch the other day and it is one of my favorite ways to eat any extra fish I have. I made a really light meal with a simple side of shredded carrots.

Fish Sandwich

Serves 2

Ingredients:

2 fillets of white fish

2 Tbs. butter

Bread, toasted

Tomato, sliced

Lettuce

Red onion, sliced

Mayonnaise

Directions:

Heat in a skillet of medium heat the butter. Season fish with salt and pepper. Add fish, cook until brown on one side about 3-5 minutes. Flip and cook till fish is no longer opaque, another 2-4 minutes. Place on toasted bread with tomato, lettuce, onion and mayonnaise.

 

Carrot Salad

Ingredients:

4 carrots, shredded

1 lemon, juiced

2 Tbs. olive oil

2 Tbs. parsley, chopped

Directions:

Mix all ingredients together and season with salt and pepper.
