I have never had pimiento cheese and it always sounds so delicious. So I found this recipe in Southern Living, and it was just as I had predicted. I really like pimiento cheese. We had leftovers and I just ate the cheese as a sandwich. If you haven’t tried it yet you really need to. It is easy and super delicious.
Makes 4 cups
1 ½ cups mayonnaise
1 (4 oz.) jar of pimento, diced
1 tsp. Worcestershire sauce
1 tsp. finely grated onion
½ tsp. cayenne
1 cup extra-sharp cheddar, shredded
1 cup sharp cheddar, shredded
Stir together mayonnaise, pimentos, Worcestershire sauce, onion, and cayenne. Stir in cheeses. Serve on crackers topped with chives.
