Cauliflower Soup



Soups have been my thing lately, and here was only of the highlights. This creamy cauliflower soup is super simple, easy and more importantly delicious. It tastes of onion and cauliflower and with a simple topping of cheese and oil it the natural flavors really come through. If you like cauliflower you should definitely try this recipe.


Cauliflower Soup

Serves 6


1 Tbs. olive oil

1 Tbs. butter

2 onions, chopped

2 garlic cloves, thinly sliced

3 celery, sliced

thyme sprigs

1 head of cauliflower, broken into pieces

6 cups chicken broth

Extra-virgin olive oil

Parmesan cheese, shredded




Heat large pot on low heat with oil and butter. Add onions, garlic, celery, thyme and season with salt and pepper. Cook for about 20 minutes. Add cauliflower and broth. Bring to a boil, then reduce heat to a simmer and cook for another 20 minutes. Puree soup with immersion blender. Season with salt and pepper if needed. Place soup in bowl and top with olive oil, parmesan cheese and parsley.
